Aroma virtuoso Michael Kempf has been delighting guests to calm FACIL at Potsdamer Platz for 15 years with his light cuisine, which has been carefully composed in color and texture down to the last detail. For almost as long, the 42-year-old, now decorated with two stars, has been working with Stefanie Hering; the symbiosis of porcelain art and haute cuisine, as only Hering Berlin items allow, is a central element in FACIL’s culinary style. “Michael Kempf creates his compositions with a specific view to our porcelain design,” says chief designer Stefanie Hering. “The interplay of food and crockery creates a visual, complete work of art. This is an honor for me – as well as a design challenge.” This is strikingly apparent on one of Kempf’s signature dishes, the “Cloud.” The dessert, made of different sized, filled balls of white chocolate, is served on the deep blue presentation surface of a plate from Hering Berlin’s “Blue Silent” collection; only through this does the illusion emerge of a cloud sailing across the sky. The Pulse, Velvet, Silent Iron and Cielo collections are also used in the bamboo-lined restaurant on the 5th floor of the Mandala Hotel.

Eine besonders intensive Zusammenarbeit verbindet Stefanie Hering mit einem Star der US-amerikanischen Kreativküche: Robert Cortez. Der gebürtige Texaner kocht nicht in einem festen Restaurant, sondern gestaltet – unter anderem während des Berliner Eat Berlin-Festivals vom 20.2 bis 1.3.2020 bei Hering Berlin in der Potsdamer Straße – aufsehenerregende Pop Up-Events an der Schnittstelle zwischen Kulinarik und bildender Kunst. Zentrale Elemente seiner Genuss-Happenings: Wie Bilder komponierte Gänge auf Porzellanen von Hering Berlin. Karamellisierten Pfifferling mit Trüffeln und Wasserkresseblättchen serviert Cortez auf Silent Iron mit seiner vom Grauen ins Blaue changierenden, per Hand ausgegossenen Glasur. Geschmorte helle und violette Endivie mit Kaviar, Blüten und Käsecreme drapiert er auf Velvet mit seinem zart rauen, handgeschliffenen Rand. Eine in gestoßenes Eis gebettete, mit Kaviar, Fenchelkraut und Kamille gefüllte Auster findet ihren perfekten Hintergrund auf der messingfarbenen Anrichtefläche von Silent Brass. Und zu den Rot- und Orangetönen von Saiblingsrogen mit winzigen roten Beeten und Johannisbeer-Sauce bildet der sanfte, von unregelmäßigen weißen Punkten durchbrochene Goldton von Illusion den perfekten Kontrast. Auf Cortez‘ Tafeln sind die Teller von Hering Berlin endgültig einer rein rahmenden Funktion enthoben. Der Kreativkoch erhebt den Dialog zwischen Porzellan und Speise zur Kunstform. „Ich schätze mich jedes Mal aufs Neue glücklich“, sagt Cortez, „mit diesen wundervollen Tellern von Stefanie Hering zu arbeiten.“
